The Giarratana is a sweet variety of onion of a large size and is in the list of traditional Italian agricultural food products (P.A.T.) of the Italian Ministry for agricultural, food and forest policies (Mipaaf).
Beer cooked Giarratana Onion
This BEER cooked Giarratana Onion is grown and produced in our Azienda Agricola La Collina degli Iblei (Hill of the Iblei Farm) and is praised for its particularly sweet flavour. It is further enriched by Chef Ruto’s recipe which uses only locally made craft beer.
Giarratana Onions, White wine vinegar, Craft Beer, Raw cane sugar, Lemon Balm, Black pepper, cloves.

Marsala cooked Giarratana Onion
This is one of the most precious products of all the territory, for the sole fact that it is unique for its sweetness and size and also because its production is limited to July and August. We will let you try your hand at harvesting this fruit of the land; it will be an unforgettable experience. It is particularly flavoursome when tasted according to Chef Ruta’s recipe which is enhanced with dry MARSALA wine exclusively from Sicily.

Grappa cooked Giarratana Onion
This is another version of our Giarratana Onion that must not be missed. It is grown and produced in our Farm and the recipe with GRAPPA is the one which exalts the typical sweetness of the Onion most of all. The combination is signed by Chef Ruta as always and only precious Grappa from Nero d’Avola Syrah grapes is used for this recipe.
Cipolle di Giarratana Onions, Extra Virgin Olive Oil, White wine vinegar, Grappa from Nero d’Avola Syrah grapes, granulated sugar, Soy sauce, Minced Ginger, Garlic and Chilli.
